It seems like spruce tips get all of the attention in the spring, but this year my love of pine has led me to an interesting folk remedy. As I was researching traditional uses of pine in Polish folk medicine, one of the most popular recipes that came up again and again was pine tip syrup.

Until now, I hadn’t really experimented with the tips. I’ve devoted so much love and attention to the resin, needles, pollen, bark and cones, but never thought about the chartreuse shoots that appear each year.
